Chinese Table Manners

There are some things you must be careful to do in China to avoid offending your host at the table. Seating arrangements are important, with the most important person seated furthest away from the door. The youngest or least important one should be closest to the door, but it is allowed for the host to be seated nearest the walkway for ease of movement.

Chopsticks, rather than knives and forks are used, and nowadays it is usual for one pair of common chopsticks to be used for serving. This is an aid to hygiene and has been done more since SARS arrived on the scene. You should never forget to replace the serving chopsticks with your own, once you have chosen your food.

An even number of dishes should be ordered for normal meals, while an odd number is considered suitable for occasions such as funeral meals. If serving duck or goose, the head should never point towards the guests. The most important dish should be placed in front of the most important person, but in the case of soup bowls the centre is the correct position.

When eating fish, first eat the top half, then take the skeleton out and continue eating without turning the fish over. A turned over fish resembles an upturned boat and so is considered an ill omen.
